Game time and the food is on! On Super Bowl Sunday people consume more calories and more food than almost any other day besides Thanksgiving. Super Bowl Sunday is becoming un officially known as National Snacking Day. The success of your party depends on have plenty of food. There are many money saving ways to make your party great and have a festive assortments of food without it costing you a fortune.

With consumers spending more than $50 million every year on snacks for the Super Bowl, and consuming 14,500 tons of potato chips, 8,000 tons of popcorn and tortilla chips, people are coming to your house to EAT!

So Much Food Choices, But Here Are a Few Money Saving Recipes

Money Saving Fresh Salsa:

You will need:

  • 4 tomatoes

  • 3 jalapeno peppers

  • 1 - clove Garlic

  • 2 - TBL Fresh Cilantro

  • 1 - tsp lime juice

  • Salt

  • Pepper

Prepare: Combine all ingredients in a blender until it is at the consistency you prefer.

Money Saving Guacamole

You will need:

  • 1 ripe avocado

  • ¼ onion

  • 1 clove garlic

  • 1 tablespoon chopped cilantro fresh or 1 tsp dried cilantro

  • 2 tsp lime juice

  • 1/8 teaspoon salt

Prepare:

Peel and chop the avocado into ½ inch or smaller chunks, depending on your preference. Finely chop the onion. Mince the garlic. Combine the avocado with onion, garlic, cilantro, lime juice, and salt and mash until mixture has a smooth consistency. Can be refrigerated up to four hours prior to serving. Makes about ¾ cup

Money Saving Sweet and Sour Meatballs

You will need:

  • 1 12 fl oz bottle of chile sauce
  • 2 tsps lemon juice
  • 9 oz grape jelly
  • 1 lb ground beef or ground turkey
  • 1 egg beaten
  • 1 large onion, grated
  • salt


Prepare

  1. Stir chili sauce, lemon juice and grape jelly. Pour into a pot over and simmer over low heat until warm.
  2. Combine ground beef, egg, onion and salt. Mix together and form into 1 inch balls. Add to sauce and simmer for 1 1/2 hours.

Makes about 2-3 dozen meatballs depending on the size of the meatballs

Money Saving Potato Skins

You will need:

4 baking potatoes

2 onions

cooked bacon pieces

2 TBL butter

¾ cup cheddar cheese shredded

2 TBL parsley chopped

½ cup milk

salt and pepper

Prepare:


Preheat oven to 400°F. Bake the whole potatoes for about 50 minutes

Reduce oven temp to 350°F

Cook onions until translucent and soft for about 1-2 minutes

Remove the potatoes from the oven. Take off top portion of the potatoes Take the removed skin from the and put it in a baking dish with a small amount of oil lining the dish.

Take the rest of the potato and scoop out the insides with a spoon.

Put the scooped out potato in a separate bowl and mash. Add milk and butter and mix until very smooth. Add the cheddar cheese, cooked bacon, and onions. Add parsley, salt and pepper.

Put the mixture into the potatoes that were previously scooped out.

Bake for 25 minutes at 350°F. Serves 4


Money Saving recipe : Vegetarian chili

You will need:

  • 2 cans (28 oz each) diced tomatoes
  • 3 cans of any beans - kidney, northern, black, pinto
  • 1 ½ cups chopped celery
  • 1 ½ cups chopped green and red pepper
  • 1 cup chopped onion
  • ¼ cup red wine vinegar
  • 3 cloves garlic minced
  • 2 TBL olive oil
  • 3-4 tsp chile powder
  • 1 ½ tsp basil
  • 1 ½ tsp oregano
  • 1 ½ tsp cumin
  • 1 tsp allspice
  • 1 tsp parsley
  • ½ tsp salt
  • ¼ tsp hot pepper sauce
  • ¼ tsp black pepper


Prepare:
In a 4-6 quart pot, heat olive oil, add celery, pepper, onion, and garlic. Cover and cook over medium heat for 10 minutes or until vegetables are soft and tender. Stir occasionally. Mix undrained cans of tomatoes, add beans that have been drained, vinegar, chile powder, parsley, basil, and the other spices, and hot sauce. Bring ingredients to a boil and reduce heat. Simmer on low heat, covered for 1 ½ hours. Uncover and simmer for an additional 30 minutes. Stir constantly.
Serves 6


Money Saving: Cheesy Spinach and Artichoke Dip

You will need:

  • 1 jar14 oz.) artichoke hearts drained and finely chopped
  • 1 10 oz pkg. frozen chopped spinach thawed and well drained

  • 3/4 cup Grated Parmesan Cheese

  • 3/4 cup Mayonnaise

  • 1/2 cup Shredded Mozzarella Cheese

  • 1/2 tsp garlic powder

prepare:

Preheat 350°F.
Mix all ingredients into an oven proof bowl or pie plate. Bake for 20 minutes.


You can serve this dip with chips, vegetables, with crackers, and in a bread bowl. Makes about 20 servings.

To make a bread bowl. Use a round sourdough bread. Cut the top off, and hollow out the bread from the inside. Cut the hollowed out bread into pieces and put around the outside of the bread. Fill the hole in the bread with the dip and watch your guests devour this fun and delicious appetizer.

Money Saving Mahantongo Tomato Salad

  • 4 large tomatoes cut into chunks
  • ½ cup vinegar
  • ¼ cup water
  • 1 TBL minced onions
  • 1 TBL sugar
  • ¼ tsp pepper


Combine vinegar and water in a bowl and stir. Add sugar and stir until sugar dissolves.
Mix in onions and pour mixture over tomatoes. Sprinkle with pepper and serve

Money Saving Garlic Bread
you will need:

  • 1 pound loaf french bread cut in half lengthwise
  • ¾ cup of butter
  • ¾ cup grated parmesan cheese
  • 3 cloves garlic
  • 2 TBL chopped parsley
  • ¼ tsp oregano



Mix butter, Parmesan cheese, mayo, garlic, oregano and parsley in a medium bowl.

You can make this 2 days in advance and refrigerate the mixture. Then bring to room temp before putting it on the bread.

Preheat oven to 375°F.

Spread mixture on each half of bread and wrap foil. You can make this one day in advance and keep refrigerated. When ready to serve put bread on a baking sheet cut side up. Bake for 20 min. Remove foil from bread. and put in the broiler until golden brown for about 2 min.
